Spicy Broiled Shrimp p. 574

Ingredients:garlic, salt, cayenne, paprika, olive oil, lemon juice, shrimp.

This was an easy recipe that is great for either appetizer or light entree. I'd love to try this at the beach with really fresh shrimp or scallops.

Mix together all ingredients except for shrimp. Then dip or coat your shrimp in the sauce. Broil or grill until cooked.



Yep, that's it. It was indeed spicy, but you can control the heat by how much cayenne you choose to use.



Be sure to drizzle some fresh lemon juice over the finished product for an added zing.

Salmon Roasted in Butter p. 583

Ingredients: butter, salmon fillet, salt, pepper, parsley.

This is about one of the easiest recipes ever. Seriously. I feel like I say “this dish is easy” in almost every post, but seriously, it is.

Simply melt some butter in a pan (about half a stick). Then put your salt and peppered salmon in, preferably with the skin still on. Cook six minutes on one side (at about 475 degrees) and three to six minutes on the other. Mine only took three, but they were smaller fillets.

I garnished with a squeeze of lemon juice and fresh parsley. Delish.

Shrimp Scampi p. 574

This was our second night’s meal while at the beach. I had purchased the shrimp at the fish market the day before. This area does a lot of shirmping, so I knew it was going to be delicious.



This is yet another simple dish to prepare. Heat some olive oil or butter in a pan over the stove, add the shrimp. Cook for a few minutes until pink on one side and then flip. We added fresh parsley, lemon juice, and white wine.



We served over pasta and with asparagus.

Simplest Paella p. 470

Bryan loves rice. One night when I asked what we should cook for dinner he suggested a rice based dish. I searched the book and thought it would be fun to try Paella. I have actually only had paella once, in NYC. So I was a bit nervous trying it out.

The recipe calls for shrimp and this was the first time I have cooked with shrimp or bought shrimp. (I am very skeptical around shrimp because of a prior food poisoning.) But it turned out okay. Mental note to self: buy already peeled shrimp next time.

The flavor was good and everyone enjoyed it ... at least I did. Paella=Success!
